Alan and I are getting ready for a long vacation out west to site see the Grand Canyon and her sister canyons as well as the surrounding areas of Marble Canyon and Flagstaff Arizona and a brief stay in Colorado Springs to visit friends. Preparing for this trip prompted us to figure out how we would stay healthy along the way. We want to maintain as much of our raw food diet as possible while we drive 5,000 miles in 30 days. That’s a lot of time on the road and we know from previous travels that planning raw food snacks ahead is a must. The last thing we want to do is be caught on the road with no healthy food and succumb to the mostly refined carbohydrate snacks found at rest stops and gas stations.

Getting Ready To Dehydrate 2 Pounds of Fresh Spinach For Smoothies

For this trip I came up with several ideas. We love our green smoothies and really hated the idea of leaving those behind because we were traveling. So, the first idea was to bring ole faithful along aka Vitamix Blender and use dehydrated leafy greens instead of fresh spinach. For the convenience of making green smoothies at our hotel, but not wanting to deal with having to keep the spinach cool for days at a time, dehydrating several pounds of organic baby spinach seemed to be the answer. It worked like a charm and in our kitchen taste test we could not tell the difference.

Granola and Trail Mix Bars

Additionally, here are 2 new raw food snacks I created for our upcoming road trip. For this trip we decided against our usual trail mix snack of nuts, raisins and seeds (and sometimes chocolate chips) that we normally throw together, for something a bit more exotic – Trail Mix Bars. Additionally, instead of going for the raw granola as a snack or breakfast we now have granola bars. With granola bars we won’t need to mess with transporting almond milk, spoons, bowls and have to fuss with clean-up. The piece de resistance for the raw food snacks are the Trail Mix Bars. These were inspired by 2 Moms In The Raw, a company that sells delicious raw food snackage. Additionally, I’ll make flax seed veggie crackers and if time permits Healthy Dark Chocolate Truffles. Look for the recipes on the granola bars and trail mix bars soon at our healthy diet site.

These raw and mostly raw food snacks will be great for the road. Most do not require refrigeration because they are dehydrated and we will have high density nutritious snacks to keep us going on those long 600 to 700 mile per day drives and hikes up and down and around the great Southwest.
